Everyone loves avocado toast, and this avocado toast with egg is the perfect breakfast. It’s simple, nutritious, and filling. At brunch, you’ll usually see poached eggs on the menu, but they can be difficult to get right. So while we all work on our poaching techniques, an over medium egg will do the trick. The combination of creamy avocado, perfectly cooked egg, and a sprinkle of everything bagel seasoning with a kick of sriracha will take your breakfast to new heights. It’s giving brunch on a weekday and I’m here for it!
Avocado Toast Ingredients
- 1 slice of thick bread
- 1 ripe avocado
- 2 eggs
- Everything bagel seasoning
- Sriracha sauce
- Salt and pepper
How to Make Avocado Toast with Egg
Toast the Bread
Start by toasting your bread until it’s golden brown. Since we’re heating up a pan for the eggs anyway, I like to toast the bread in the pan. It browns so nice and evenly, and soaks up the butter – giving it a delicious flavor and texture.
Cook the Over Medium Eggs
Here comes the star of the dish, the over medium eggs. Heat a skillet over medium heat and melt butter in the pan. Crack eggs into the skillet, making sure that they don’t touch. Let them cook for 2-3 minutes until the whites are set. Then, carefully flip them over without breaking the yolks. Let the eggs cook for another 30 seconds to one minute. Way easier than a poached egg!
Slice the Avocado
Cut the avocado down the middle to the pit. Using a knife, remove the pit from the avocado. Then, slice each half vertically into 4-5 slices. Use a spoon to remove the avocado from the skin. I usually slice the avocado while the eggs are cooking. Once everything is done, it’s time to bring it all together.
Assemble the Avocado Toast with Egg
Slice your toast in half diagonally, then top each half with the sliced avocado. Add kosher salt and fresh ground black pepper to taste. Next, add your over medium eggs to each half and drizzle with sriracha sauce. Finish the dish with everything bagel seasoning. Enjoy!
Avocado Toast with Medium Egg
Ingredients
- 1 slice thick bread
- 1 avocado ripe
- 2 eggs
- everything bagel seasoning to taste
- sriracha sauce to taste
- salt and pepper to taste
Instructions
- Heat a skillet over medium heat and melt a tablespoon of butter. Add bread to the skillet and toast until golden brown. Set aside the toast.
- Add more butter to the pan and crack two eggs, carefully so that they do not touch. Let the eggs cook for 2-3 minutes, then flip.
- Allow eggs to cook for 30 seconds to 1 minute on the other side. Remove the eggs from the pan.
- Cut the toast in half diagonally and add sliced avocado to the toast.
- Season the avocado with salt and pepper to taste, then top with the over medium eggs.
- Drizzle sriracha sauce over the eggs and add everything bagel seasoning to taste.
